Antidiabetic effect of iron-rich fortified amla (Emblica officinalis) Ready to Serve (RTS) health drink

Many pathological illnesses, including diabetes, have been treated using Emblica officinalis, also known as Amla in Indian Medicine. The main aim of this experimental study is to assess the effects Apple Cider Vinegar (ACV) a preservative Salt-based Ready Serve (RTS) beverage order preserve blood glucose levels and investigate various concentrations adding ACV extend shelf life product. RTS beverages were prepared by at four different (7%, 8%, 9%, 10%) subjected sensory evaluation test 30days, 60days 180days interval. At ICAR-Krishi Vigyan Kendra Tirunelveli, on diabetic ready-to-serve was carried out from January August 2022 with goals establishing standard method preparation, researching shelf-life, assessing outcomes scores. Additionally, scores for qualities like appearance, colour, flavour, taste, texture, overall acceptability negligibly decreased their maximum value, compositions exhibited no microbial development after six months storage. It found that formulation 10% ingredient more acceptable, safer, better maintaining its quality attributes. will be commercialized healthy diet that's suitable diabetics. This project could increase farmer income developing salt-based, ready-to-drink help diabetes patients maintain normal sugar levels.
